Benefits of Organic Eggs

Organic eggs are extremely nutritious and contain significantly higher ratios of Vitamins A and E, Omega 3, and beta carotene than commercially produced eggs. They are also lower in cholesterol and saturated fat, making them an excellent choice for anyone concerned about their health. Furthermore, trace chemicals from pesticides and fertilizers have been detected in commercial eggs, and many of these chickens are given growth hormones and antibiotics to make them produce more. Chickens at Mountain Valley View Farm are fed an all-natural grain and allowed to roam and forage for food to supplement their diet. We do not use chemical pesticides or fertilizers on our farm, nor do we give our animals growth hormones or antibiotics, so you can be assured that our eggs will not have the toxins so common to commercially produced eggs. You will also love the taste of our eggs, as studies have shown that organic eggs from hens that eat a varied diet have a noticeably stronger and more pleasing flavor than commercial eggs.

Benefits of Duck & Goose Eggs

Duck eggs are significantly larger than chicken eggs, and goose eggs are larger still. One goose egg, when cooked, will be roughly equivalent to four chicken eggs, and both duck and goose eggs also have more yolk than the average chicken egg. Thicker shells lend themselves toward a longer shelf life (at least 6 weeks in the refrigerator), and goose eggshells are so thick that they are perfect for the delicate art of carving and embossing beautiful designs directly onto the shell. Both duck eggs and goose eggs are slightly higher in protein content, as well as containing greater concentrations of other nutrients like iron, potassium, Vitamin E, Vitamin B12, and Vitamin D.

Duck and goose eggs have their own unique flavors as well. Duck eggs have a noticeably stronger flavor than chicken eggs, and although not everyone may care for this taste when eaten plain, nearly everyone agrees that duck eggs are unparalleled when used for baking. Their richness produces moister, fluffier baked goods–absolutely incredible cakes and cookies. Goose eggs taste similar to chicken eggs, but seem a bit drier. They are also thicker than chicken eggs and have a custard-like yolk. They are also wonderful in cooking and are best in sweet confections and omelets.

Icelandic Sheep at Mountain Valley View Farm!

Mountain Valley View Farm is excited to announce the arrival of Icelandic sheep at our farm! We have added five of these beautiful animals to our growing flock of sheep, which also includes Babydoll Southdowns. In the future, we will also add East Friesians to our flock, but for now we are tickled pink to welcome the Icelandic breed to our family farm.

Icelandic sheep are one of the oldest and purest breeds in the world today. The Vikings brought them to Iceland 1100 years ago, where they became into a hardy breed known for their ability to endure cold, harsh temperatures and forage efficiently for food even in difficult conditions. Icelandic sheep are unique in that a small portion of the population developed a keener intelligence. These leader-sheep are actually able to help farmers manage their flock by remaining highly alert to predators and other dangers, guiding the other sheep to and from pasture, and even sensing the onset of bad weather.

Although most sheep in Iceland are raised only for their meat today, the breed has a long and excellent milking history. Ewes typically produce 1 liter of milk each day for 8 weeks following the birth of a lamb, but quite a few have been known to produce 2-3 liters per day, making them wonderful milk producers. Mountain Valley View Farm is raising Icelandic sheep principally for their milk, which is rich, creamy, and sweet as well as high in nutrients.

Icelandic sheep have a thick, dual coat of fleece to keep them warm during the harsh winters. The long outer coat is called tog and the fine inner coat is called thel, and both are used to make wool products. Tog is classified as a medium wool and is used primarily for weaving and making durable products like rugs, while thel is softer and finer, making it ideal for clothing. Tog and thel can also be used together to create a knitting wool known as lopi. The Icelandic sheep is the only animal that can produce the distinctive lopi yarn. Starting in October, Mountain Valley View Farm will begin selling the colorful, warm wool produced by our Icelandic sheep.

Mountain Valley View Farm, Inc. now offers regular weekly delivery of our delicious, organic farm fresh products! This is a convenient way to make sure that you are getting fresh produce and eggs on a regular basis without driving out to our farm or to one of the farmers’ markets each week. You can choose to receive a selection of seasonal vegetables, a selection of seasonal fruits, a combination of fruits and veggies, or a dozen eggs from our organic, free-range laying hens. In the future, we will also offer weekly deliveries of our tasty, nutritious goat and sheep milk. Right now, we are in the process of receiving our organic certification and dairy certification, and we are so excited about the future of our family farm!

There is a small per-mile delivery fee that will be calculated according to your location. Similarly, the total amount will vary depending on which items you choose to have delivered: vegetables only, fruit only, fruit and veggies, or eggs only. Yaks Coming Soon to Mountain Valley View Farm!

Mountain Valley View Farm, Inc. is excited to announce that our farm will soon be home to a small herd of yaks. This even-tempered, long-haired bovine comes from the far Northeast, and is indigenous to the Himalayas and Tibet as well as parts of Russia and Mongolia. The wild yak was also once found in Nepal and Bhutan, but was hunted to extinction and now only domesticated animals exist in these two countries. Similarly, although there is a large domestic yak population worldwide, the number of wild yaks has dwindled until the species has been declared endangered.

Domestic yaks have been kept for thousands of years for their meat, wool, milk, and use as a beast of burden. Their unique physiology enables them to endure high altitudes and extremely cold temperatures, making them an invaluable asset for people journeying over mountain passes. Yak milk is rich and high in fat content, and it is used to make a thick butter with a cheese-like texture that is one of the primary ingredients in Tibetan butter tea. Yak meat is very lean, with a delicate beef-like flavor and very little fat marbling.

At Mountain Valley View Farm, Inc., our yaks will be kept mainly as beloved pets. They will be a welcome and unique addition to our petting zoo, and we will also use their wool. Yak wool is thick and warm, making an ideal yarn that is durable, lightweight, and very soft. Although most wild yaks are dark brown in color, there is a greater variation of color in domestic yak herds, including some white and piebald colorations, and this should enable us to offer several different colors of natural, undyed yarn. We also plan to offer yak milk soap. The high protein and fat content of yak milk gives the soap a rich lather and wonderful moisturizing properties. We are very excited to be able to offer these wonderful products and can’t wait to welcome our yaks to their new home!
